I think I'd be interested to try it on soba noodles first,(pan fried) to test out the flavor and consistancy.
In my experience, Japanese style sauces like this are often meant to be reduced with what you're cooking it with,(like a Carolina BBQ sauce is brushed on or "Mopped" multiple times while cooking to build up a glaze)
